To brighten up the day, I started with gluten-free and dairy-free Lemon Poppyseed Muffins - a lemony taste and an almond aroma... just the right combo of zing and comfort this morning.
Our milk today is everyone's favorite: fresh-made almond milk with a hint of cinnamon and maple syrup. This goes well on the Agave Goji Trail Mix Granola, a crunchy blend of oats, seeds, nuts & dried fruit.
The main entrée today was a Veggie & Sprouted Tofu Medley composed of gold beets, carrots, butternut squash, Swiss chard & spinach, all organic, of course! I also include a select blend of spices and herbs that both provide great flavor and act as powerhouses for balancing the immune system and blood sugar, not to mention , providing minerals and vitamins. Which exotic herbs could these be? Believe it or not: coriander, cumin, basil and cilantro, to name a few!
