Raw Cacao Ice Cream with Cacao Nibs

1 whole mamey, peeled and cubed ( equals approx. 2 cups fruit)
1/4 cup lucuma powder
2 cups raw almond milk
1/2 tsp vanilla extract or 1/4 tsp raw vanilla powder
1/2 cup raw Cocao powder
1/2 tsp sea salt
1 tsp guar gum, optional
2/3 cup raw agave
1/3 cup Cocao nibs

  Place all ingredients except nibs in high speed blender or food processor.
Mix on high speed until well blended. Add nibs, blend just till integrated through.
Place mixture into airtight container and place in freezer over night. 
When ready to eat cut into chunks and place back into blender. Blend with a little more almond milk to create a soft serve ice cream . I this ought this was best, but you do not need this step. Just let ice cream stand at room temp for 10-15 minutes before serving.
Makes approx. 4- 1 cup servings.
