I juiced carrots, apples, oranges and ginger this weekend. I created this juice blend for a restaurant I opened a few years ago. The juicing left me with a lot of pulp I wanted to do something with so I created this recipe for folks here at the Desoto Oceanview Inn, here in Hollywood Florida. It's a spendy little muffin, but it will still be less expensive than any store-bought ones, and so much healthier. Chock-a-block full of vitamins, healthy oils, protein, and essential micronutrients. It's satisfying without being over-filling. Let me know what you think, it has gotten raves here so far...
Good Morning Sunshine Breakfast Muffins
Gluten Free, Dairy Free, Soy Free, Egg Free(optional)
Preheat oven to 350 degrees.
Blend together Dried Ingredients;
1 cup arrowroot starch
3/4 cup sprouted brown rice flour( brown rice flour can be substituted)
1/4 cup buckwheat flour
1/2 cup quinoa flakes
2 tsp guar gum
1 tsp baking soda
2 tsp baking powder, aluminum and gf
1/2 tsp cardamom powder
1 1/2 tsp cinnamon
1/2 tsp sea salt
Cream together;
1/2 cup coconut oil, softened
1/2 cup raw cane sugar
2 large eggs, or 2 tbls ground flax soaked in warm water, (either of these should equal 1/2 cup liquid total)
Blend into creamed mixture;
1 cup pulp, carrot, apple, orange and ginger( or can use any pulp you want to use up)
1/2 cup juice(good morning sunshine, or can use orange, apple or carrot only)
1/2 cup water or coconut milk
1/2 cup vanilla coconut yogurt
Slowly mix dry ingredients into wet mixture, until well blended.
Place batter into oiled or lined muffin tins, 2/3 to 3/4 full.
Optional topping;
Blend the following and sprinkle on top of muffins before baking.
3 tbsp quinoa flakes
3 tbsp raw sugar
2 tbsp melted coconut oil
Pinch sea salt
Bake 54 mini muffin- 15-20 minutes
16 medium muffins- 20-25 minutes
8 large muffins- 30-35 minutes
Let set in tin for five minutes and then remove to finish cooling on cooling rack.
Other options;
Instead of pulp and 1/2 cup water use grated carrot and apple. And use orange juice for juice. Grate tsp of ginger into wet batter.
Can add in soaked raisins and/or sunflower seeds for heartier muffins.
