I wanted to get this posted while fresh in my mind since I can be bad about writing recipes down. It's raining this morning @ the desoto, it felt like a warm hearty breakfast was in order for the inward reflection that was coming on from the rainy weather that looks like is here for the day. Warm and nourishing was what I was going for this morning with the menu as follows : Broccoli Spinach Baked Omelet, Rosemary and Olive Oil Roasted Baby Potatoes, with the Juice Du Jour being Orange-Carrot-Ginger. I also served an oat granola with dried fruit and seeds, sweetened with Agave and served with fresh Raw Almond Milk.
Even though I do not eat eggs on a regular basis myself (I seem to have an intolerance for them), my partner & I thought this recipe was delicious. So I hope you will try it soon!
Preheat oven to 425 degrees
4 cups broccoli, chopped
3 Red & orange mini peppers, chopped
3 green onions, chopped
2 tbsp virgin expeller pressed olive oil
Sauté broccoli, peppers, and green onions in olive oil just until broccoli turns a bright green and onions and peppers are soft. Place in 9x13 baking dish and spread evenly on bottom.
4 cups baby spinach
24 small or 18 large cage free eggs
3/4 cup plain coconut yogurt
1 tsp powdered cumin
1 tsp powdered coriander
1 tsp flaked dulce
1 tsp sea salt
1/4 tsp white pepper
2 tbsp Bragg's liquid aminos (or coconut aminos if soy free)
Place egg, yogurt and spices in large bowl and blend with hand blender or whisk until well blended.
Place spinach on top of sautéed broccoli evenly.
Pour over spinach, pushing any spinach leaves or stems down below the egg line.
Place in oven and cook for 10 minutes and then turn down the temperature to 375 degrees and cook for another 35 minutes. It should look thoroughly cooked and lightly brown on the top.
Take out of oven and place,
1 cup shredded vegan cheddar, daiya works well
Place back in oven under the broiler for just a couple of minutes, until cheese is melted.
3 or 4 small heirloom tomatoes, a variety of color is nice
Slice tomatoes while cheese is melting. Take omelet out of oven and place tomato slices on top in decorative manner.
Let omelet sit for 10 minutes before cutting and serving.
